Corn Salsa
½ pint Kitchen Kettle Corn Relish
½ pint Kitchen Kettle Pepper Relish
½ pint Kitchen Kettle Hot Pepper Relish
1 T. cilantro dry, or 1 tsp. fresh chopped cilantro
Pinch cayenne pepper
Salt & pepper to taste
Combine all ingredients, bring to
a boil, and simmer for 10 minutes.

Quesadillas
4 10" tortillas
4 T. corn salsa
1 c. shredded cheddar cheese
2 T. sour cream
2 scallions, sliced thin
Heat oven to 375°. Place
tortillas on lightly oiled cookie sheet. Divide cheese onto tortillas.
Heat until cheese melts. Place one tortilla on top of another to create
two quesadillas. Cut each into 8 pie wedge slices. Top with Corn Salsa,
sour cream and scallions. Makes 2 servings. |
